Call Me Earthy Crunchy: Banana Granola Pancakes

This Tuesday was yet another Costa Rican religious holiday, which means yet another day off of school! Ross and I woke up and did a 3 mile run in disgustingly hot weather, it had to be roughly 215 degrees. Celsius.

We got Mango and went directly to the pool after to cool down. The pool I always refer to on here is the pool at the Hotel Vista del Cerro. The hotel is a 5 minute walk from our house, and the women who owns it is probably one of the kindest people I know. We teach her children in the school here (I have her daughter in 5th grade, Ross has her son in 2nd). Not only does she offer us a pool to swim in anytime we want, she has also gone out of her way to make sure that we (Ross and I, and our visitors) always have a fun time in Costa Rica doing tours, hot springs, etc.

Ross’ family stayed at the hotel when they came to visit us. It is not only very affordable, but also equipped with: AC, cable, hot showers, beautiful view of the volcano, a great breakfast and obviously, a fantastic pool! After the pool, it was PANCAKE TIME! I’ve been craving granola pancakes forever, and I finally made some. Granola pancakes, yogurt and bananas make a great breakfast combo.

If possible, it’s always best to cook from scratch BUT since it’s hard to find ingredients here (okay it’s possible but it takes a lot of searching and translating) I cheated and used a Betty Crocker pancake mix. I then added in water, cinnamon, and granola with dried fruit to the batter.Drop one on the griddle, and While you cook it on the first side, you sprinkle more granola on the top and then flip it and cook the granola side, which gives it a great crunch.

Add yogurt and bananas on top and voila, your done!
